|4 rashers streaky bacon|
|1 tbsp golden syrup|
|1 beetroot, sliced into ½ cm discs|
|1 tbsp vegetable oil|
|¼ cup cream cheese|
|2 English muffins, halved and toasted|
|Handful baby spinach|
1. Preheat oven to 180°C.
2. Place the bacon on a wire rack on top of a baking tray. Brush with the syrup and bake for 10–12 minutes, until golden and crispy.
3. Drizzle the beetroot with oil and season with salt and pepper. Spread out on a baking tray and roast for 20 minutes, until tender.
4. Build the open sandwiches by spreading cream cheese on each muffin half, adding the spinach and beetroot, and topping with the bacon rashers.
