Turn the conventional burger on its head with this mushroom burger with cheesy jalapeño sauce.
|For the sauce||For the burger|
|3 tbsp butter||8 brown mushrooms|
|3 jalapeños, roughly chopped||2 cups mixed tender leaves|
|¼ cup flour||4 beef patties, grilled|
|2 cups milk||1 avo, sliced|
|½ cup grated mozzarella||1 green peppers, chargrilled|
|Salt and pepper to taste|
For the sauce
1. In a medium pan, make a béchamel by melting the butter with jalapeños, then add the flour and mix well to form a paste.
2. Slowly add in the milk and stir until thickened. Remove from heat, fold in the mozzarella and whisk to combine. Season and set aside.
1. Stack the burger by layering mixed tender leaves on 4 raw mushrooms. Top each with a beef patty, avo slices, roasted peppers, sauce and extra slices of jalapeño. Season with salt and pepper and serve.
TIP: Instead of using raw mushrooms, you can grill the them lightly and still use them as a bun.
