The pita burger with cauliflower steaks is a different, more healthier approach to the classic burger.
|For the cauliflower steaks||To serve|
|1 cauliflower head||1 tbsp cumin||4 pita breads, toasted|
|½ cup tbsp olive oil||½ tbsp coriander||Hummus|
|2 cloves garlic, grated||1 tsp smoked paprika||Baby spinach leaves|
|½ tsp salt||1 tsp cayenne||1 can chickpeas, drained|
|4 tbsp honey or syrup||Lemon juice & zest|
|Handful fresh parsley, chopped|
For the cauliflower steaks
1. Cut the cauliflower into 4 steaks and drizzle with olive oil.
2. Rub in the rest of the ingredients and allow to marinade for 10 minutes.
3. Place the cauliflower steaks in a non-stick pan on low to medium heat and fry for 5 minutes on each side.
1. Cut the toasted pitas in half, and make pockets in each. Add a dollop of hummus, followed by the spinach, cauliflower steaks, and chickpeas. Finish with a squeeze of lemon juice and parsley.
