|1 cup tinned butter beans, rinsed and drained|
|3 tbsp plain yoghurt|
|2 tbsp chopped Peppadews, plus extra to serve|
|Salt and pepper|
|4 slices white bread|
|1 baby marrow, ribboned|
|2 tbsp vegetable oil|
1. Mash the butter beans with a fork. Mix with yoghurt, chopped Peppadews, salt and pepper.
2. Spread some butter-bean mash on each slice of bread. Cut each slice in half and sandwich together. Wrap 2 baby marrow ribbons around each sandwich and secure with a toothpick.
3. Heat oil in a pan and fry sandwiches on both sides until golden. Serve with extra Peppadews.
